Originally, the Paloma was clear due to the use of colorless soda prevalent in Latin America. The pink version became popular outside of Mexico, largely due to the availability of grapefruit soda. For a time, it was challenging to find this soda abroad, leading many bartenders to adapt the recipe by mixing fresh pink grapefruit juice, sugar, lime, and tequila, resulting in the drink’s soft pink hue.
The absence of carbonation in these early adaptations made the drink less vibrant. This gap was filled by a group of Greek bartenders—Three Cents—who created the first grapefruit soda outside Mexico after extensive experimentation. Today, various brands offer their unique takes on grapefruit soda.
