In her post, she reflected, “Today marks four years since my mother passed away. I miss her increasingly each day. Every new thing Athena says or does brings a bittersweet tightening in my heart. But Father George reminded me that our Lord, Jesus, desires our happiness, and I believe my mother does too. He encouraged me to spread light and joy through my work, and that’s something I truly aspire to do. Today, we will celebrate with dancing, singing, and enjoying strawberries and cheese—the favorites of my mom. We will honor Stavroula ‘Litsa’ Menounos with joy and light. Athena embodies pure happiness, and I know my mother sent her to me. Thank you, Mom. There’s so much more to life than I ever imagined.”
