Places are often remembered for their unique delicacies, and Hydra is no exception with its renowned amygdalota. These sweet treats are essential for any visitor seeking a complete experience of the island, representing a delightful signature that resonates with both tourists and locals alike.
The Tsagkaris workshop and confectionery is the most iconic spot to sample these amygdalota. Established in 1930 as “Café-Confectionery ‘Ta Kybelaia’,” it is located in a historic building now home to the Postal Savings Bank. This establishment is committed to preserving its traditional product range.

The Secret to Their Success
Amygdalota consist of four key ingredients: almonds, semolina, sugar, and rosewater. While almond trees once thrived on the island, changing weather patterns now necessitate sourcing almonds from Nafplio. The rosewater supplier has remained unchanged since the workshop’s inception. The amygdalota are available in two varieties: the classic “square,” often referred to as “sugar baklava,” and the more challenging “pear” version, which requires baking, resting, and shaping into the signature pear form. Notably, these treats, especially the “pear,” symbolize fertility and are traditionally offered at weddings.

Ice Cream Amygdalota
Dimitris Tsagkaris, now in the fourth generation of the family business, upholds traditional recipes while also innovating with almond as a key ingredient. “For the past four years, I’ve crafted the first almond-flavored ice cream made from pure ingredients and no preservatives. This ice cream features almond crumbs blended into a vanilla base, creating a nostalgic flavor reminiscent of the 60s. It requires two days to produce, unlike typical ‘fast food’ ice creams that take much less time,” he explains. When asked about his choice to remain on the island instead of relocating to the city, he says, “I recognize this decision comes with sacrifices, but I’m unbothered. My main priority is to grow our family business, ensuring it’s in even better shape for the next generation.”
